Sauce tartare for Cheese Fries
- 3 dl Taverna yogurt natural 10 %
1,5 dl mayonnaise, homemade or bought - 0,5 dl pickles, finely chopped
- 0,5 dl coarse-grain mustard
- 1 lemon, juice and zest hereof
- 2 shallots, finely chopped
- 1 bundle of parsley, finely cut
- 1 bundle of dill, finely cut
- Salt and pepper
Ketchup for Cheese fries
- 1 kg of ripe tomatoes, chopped
- 1 can of skinned tomatoes
- 1 big red onion, finely chopped
- 1 cloves of garlic, finely chopped
- 1 tablespoon of Tabasco or as you like
- 1 large apples, cut into cubes
- 1 pieces of star anise
- 0,5 teaspoons of salt
- 1 cinnamon sticks
- 0,5 dl cane sugar
- 2 dl apple vinegar
Sauce tartare for Cheese Fries
Mix all the ingredients in a bowl, whisk thoroughly. Serve with the cheese fries.
Ketchup for Cheese fries:
- Place all the ingredients in a pot, but only half of the vinegar.
- Cook slowly and let it simmer for 30-35 minutes. Add more vinegar if needed. Season with salt and pepper.
- Remove the cinnamon stick and star anise from the pot and blend the ingredients with a hand blender.
- Bring to boil again and let it simmer a little, remove from heat and allow to set.
- Serve when cooled.
