Ingredients:

  • 1 kg kale
  • 500 g Cheese Fries
  • 5 tbsp. pumpkin seeds
  • 5 tbsp. sesame seeds
  • 5 tbsp. sunflower seeds

Dip:

  • 10 pasteurized egg yolks
  • 1 ¼ l. sunflower oil
  • 5 tbsp. olive oil
  • 5 tbsp. white wine vinegar
  • 1 ½ tbsp. sambal oelek
  • 13 anchovies
  • 3 lemon, juice and peel

Cheese Fries with crispy kale and dip

Blend anchovies, olive oil and sambal oelek. Stir in the eggs and add sunflower oil in a thin stream while stirring. Add juice and peel from the lemons. Put aside.

Deep fry the Cheese Fries directly from frozen for 3-4 minutes.

Rinse the kale, pat it dry with a tissue or clean dishtowel and cut into smaller pieces. Spread the kale on a baking sheet and add a bit of olive oil on top.

Roast the seeds on a dry pan till they are lightly brown.

Arrange Cheese Fries and the crispy kale on a platter. Add seeds and dip and serve warm.
