Sauce tartare for Cheese Fries

  • 3 dl Taverna yogurt natural 10 %
    1,5 dl mayonnaise, homemade or bought
  • 0,5 dl pickles, finely chopped
  • 0,5 dl coarse-grain mustard
  • 1 lemon, juice and zest hereof
  • 2 shallots, finely chopped
  • 1 bundle of parsley, finely cut
  • 1 bundle of dill, finely cut
  • Salt and pepper

Ketchup for Cheese fries

  • 1 kg of ripe tomatoes, chopped
  • 1 can of skinned tomatoes
  • 1 big red onion, finely chopped
  • 1 cloves of garlic, finely chopped
  • 1 tablespoon of Tabasco or as you like
  • 1 large apples, cut into cubes
  • 1 pieces of star anise
  • 0,5 teaspoons of salt
  • 1 cinnamon sticks
  • 0,5 dl cane sugar
  • 2 dl apple vinegar

Sauce tartare for Cheese Fries

Mix all the ingredients in a bowl, whisk thoroughly. Serve with the cheese fries.

Ketchup for Cheese fries:

  1. Place all the ingredients in a pot, but only half of the vinegar.
  2. Cook slowly and let it simmer for 30-35 minutes. Add more vinegar if needed. Season with salt and pepper.
  3. Remove the cinnamon stick and star anise from the pot and blend the ingredients with a hand blender.
  4. Bring to boil again and let it simmer a little, remove from heat and allow to set.
  5. Serve when cooled.
